2000 forster s turbo

Hi I have a 2000 subaru forester s turbo, I'm only new to subaru's, I find it's not very smooth when in traffic, it's kinda jumpy if that makes any sense, just wondering is that normal for them.

I have a similar feeling with my legacy, can be jumpy and quick to engage especially at lower rpm etc. I have single mass flywheel conversation along with a uprated clutch from previous owner, if you have similar setup could be causing your jumpy feel, if not I'm sure someone else might have ideas what it could be ?!?
